In Progreso, the natural soil profile has fertile topsoil and a deep, calcareous clay sublayer. In 2004, the family posed a radical question: what if we reversed the soil? They dug two meters deep, inverting the strata to place the calcareous layer at the top and fertile soil below, thus creating a revolutionary vineyard.

 Bright pale rosé with pearly grey reflections, reminiscent of shellfish. |
 Saline and herbal notes mingle with juicy pear, lime, blood orange, and cherry, supported by floral tones like violet, rose, and jasmine. |
 Vibrant and refreshing, marked by a perfect balance of fruit and acidity. The finish is refined, mineral, and saline. |
 Serve between 13–17°C (55–63°F), ideally enjoyed between 16–20°C (61–68°F). |
