In Progreso, the natural soil profile has fertile topsoil and a deep, calcareous clay sublayer. In 2004, the family posed a radical question: what if we reversed the soil? They dug two meters deep, inverting the strata to place the calcareous layer at the top and fertile soil below, thus creating a revolutionary vineyard.

Fermented at 16°C to preserve delicate aromatics Bright pale rosé with pearly grey reflections, reminiscent of shellfish.
Saline and herbal notes mingle with juicy pear, lime, blood orange, and cherry, supported by floral tones like violet, rose, and jasmine. Vibrant and refreshing, marked by a perfect balance of fruit and acidity. The finish is refined, mineral, and saline.
Serve between 13–17°C (55–63°F), ideally enjoyed between 16–20°C (61–68°F).
