At Bodega Familia Deicas, the pursuit of excellence is a mission that guides us at every step of the winemaking process. Since our beginnings, the passion for producing wines that reflect the identity and richness of our land has been our main driving force. At the center of this dedication is the Tasting Committee, a cornerstone of our annual work.
The Tasting Committee is composed of a multidisciplinary team integrating the areas of laboratory, winery, and vineyard. Its mission is to ensure that every wine we produce reflects the highest expression of our family identity. Santiago Deicas, winemaker and third generation of the family, describes the importance of this committee: “The Tasting Committee is where all the year’s efforts converge. Key decisions are made here that determine the profile of our wines, always with the goal of maintaining the consistency and quality that define us.”
A meticulous and collaborative process
The work of the Tasting Committee begins long before the wine reaches the bottle. Throughout the year, the team closely follows each stage of the process, from fermentations to must tastings. “Adapting to the conditions of each harvest is essential,” explains Santiago Deicas. “Every year presents unique challenges, and our job is to find the best solutions to ensure that our wines maintain their identity despite climatic variations.”
A crucial part of the Committee’s work is selecting the appropriate vessels for each wine. The type of tank, the size of the barrels, and the type of wood are decisions made with great care, always following this collaborative sensory analysis. “Each wine has its specific needs, and choosing the right vessel is vital to achieving the desired result,” adds Santiago.
Another central aspect of the Tasting Committee is the creation of blends. Through detailed tastings and evaluations, the committee unifies criteria to create wines that are true to the tradition of the winery.
Learning from the world
Additionally, the committee conducts blind tastings, comparing our wines with major international benchmarks. This regular exercise not only allows us to maintain high-quality standards but also to learn and evolve in our own technique. “We blind taste our wines alongside some of the best in the world. It’s a way to ensure we’re on the right path and that we keep improving,” concludes Santiago.
Current focus: the 2023 harvest
Currently, the Tasting Committee is focused on blending the 2023 harvest. This is a crucial stage where the profile of the wines that will reach the market in the coming years is defined. “It’s an exciting time when all the year’s effort is concentrated on creating wines that reflect the best of this vintage,” says Santiago.
